Carballo is a chef who worked over 20 years in a hotel and he offers state of the art menues that will blow your mind. Fresh seafood (lobster, shrimps, a huge selection of fish) is available right from the sea.
Breakfast is as splendid as the dinner, offering cheese, bacon, sausage (also not common in Cuba where bacon has to be obtained in places as far away as a couple of hundred kilometers), fresh juice, fresh fruits, coffee, tea, you name it.
